Immediately after opening in early 2008, The Waffle became a local favorite serving delicious, innovative, and exciting dishes in a "comforts of home" environment. Owners Gavin Polone and John Papsidera used their love of classic American diners to shape what quickly became a Hollywood staple.
Being vegan, Polone stressed the importance of flavor and variety for those alike and we are continually working on new items to expand our vegan menu. John Papsidera is no stranger to classic comfort food. While traveling the country, he takes his favorite dishes and adds a soulful spin for his Hollywood diner.

We have been making effective and positive changes to the community; supporting and pushing for as many fresh and local products as well as working with the SPCA L.A. animal rights organization, and many other non-profits. Our love of dogs created our need for a dog-friendly patio, as we recognize the importance of spending social time with your four-legged friends! They'll love our homemade "Woofles"!
After over a decade in our Hollywood location, we are grateful to have been featured on "The Best Thing I Ever Ate" (Food Network) for our signature Red Velvet Waffle, as well as LA Travel Guide and "Foodbites" (CW Network).
